- If it includes tortellini, it's a yes.
- If it's overly complicated or intricate, we are out.
For the Pasta Salad
- 2 packages Tortellini (follow directions on label, they cook quickly)
- 1/2 cup red onion, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup (or less) kalamata olives, pitted
- 1/2 cup cucumber, diced
- 1 can garbanzo beans, rinsed and drained
- Feta cheese, measure with your heart
- (tomatoes, sundried tomatoes, hearts of palm, artichokes would also be yummy additions)
- 1 tbsp red wine vinegar
- 1 teaspoon honey
- 2-3 tbsp EVOO
- 2-3 cloves chopped garlic
- 1/2 shallot, minced
- Generous pinch of dried oregano, salt and pepper
- (fresh basil would also be delicious)
