Duval Family Tortellini Pasta Salad

Here's 2 things about the Duval family eating habits:

  1. If it includes tortellini, it's a yes. 
  2. If it's overly complicated or intricate, we are out. 
This pasta salad is so unbelievably easy to make and you can absolutely customize it however you'd like.My sister and brother in law just came home from the hospital with my new nephew, Reid, and I whipped up a batch of this to keep in their fridge for easy lunches or dinners.It's comforting and filling and pairs so well with grilled salmon, grilled chicken or whatever else you'd like.   
  For the Pasta Salad
  • 2 packages Tortellini (follow directions on label, they cook quickly)
  • 1/2 cup red onion, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup (or less) kalamata olives, pitted
  • 1/2 cup cucumber, diced 
  • 1 can garbanzo beans, rinsed and drained
  • Feta cheese, measure with your heart 
  • (tomatoes, sundried tomatoes, hearts of palm, artichokes would also be yummy additions)
For the Dressing
  • 1 tbsp red wine vinegar
  • 1 teaspoon honey
  • 2-3 tbsp EVOO
  • 2-3 cloves chopped garlic
  • 1/2 shallot, minced
  • Generous pinch of dried oregano, salt and pepper 
  • (fresh basil would also be delicious)
Once the pasta is cooked, I drizzle with a little EVOO or butter to avoid sticking and allow it to cool off a bit before mixing in everything else! I always let it sit in the fridge for a few hours before diving in.
