Kara + Ben’s Kale Salad

Not only has this salad become a staple in our own home, it’s become quite famous amongst our friends and family as well. Don’t be scared to dress it! I almost like it better the next day.

Salad

  • Kale, I love Lacinato and/or Curly
  • 1-2 Roasted sweet potatoes
  • 1 can dried, rinsed Cannellini beans
  • Red onion, chopped finely
  • Carrot, chopped finely
  • Feta
  • Avocado, diced
  • Toasted pistachios
Notes:
I take the spines off of the kale and chop it finely.
For the sweet potato, be generous with garlic powder if you like it (trust me).Vinaigrette
  • 1.5 tbsp Dijon Mustard
  • 2.5-3 tbsp Red Wine Vinegar
  • 1 tbsp Honey or Maple Syrup
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Basil
  • 1/2 tsp Garlic Powder (or fresh garlic)
  • 1/2 Shallot, diced
Note:
I find that vinaigrettes are always best when you eyeball ingredients and play around to fit your individual tastes!For your EVOO, look at how much liquid you currently have and then double it with Olive Oil! Shake, shake, shake. Voila!
